
Penne alla Vodka

Cook the penne in salted boiling water until al dente, reserving a cup of pasta water before draining.
Meanwhile, soften the finely chopped onion and garlic in the olive oil with the chilli flakes for 6-8 minutes.
Stir in the tomato purée and cook for 2-3 minutes until it darkens slightly.
Pour in the vodka and simmer for 2 minutes to cook off the raw alcohol.
Lower the heat and stir in the cream to make a smooth sauce. Loosen with a little pasta water if needed.
Toss the drained penne through the sauce with half the Parmesan. Serve topped with the remaining Parmesan and torn basil.
