Instructions

Finely chop the onion, carrots and celery. Heat the olive oil in a large pot and soften the vegetables with the crushed garlic for 8-10 minutes.

Add the chopped tomatoes and stock, bring to a simmer and cook for 15 minutes.

Stir in the drained cannellini beans and the pasta, and cook until the pasta is al dente, about 10 minutes.

Add the shredded cabbage for the last 4 minutes until just tender. Season to taste.

Ladle into bowls and serve topped with grated Parmesan and a drizzle of olive oil.
